Zucchini Boats

 

Ingredients

Preparation

2 large Zucchini about 1 lb
3 qtr cup low fat mozzarella cheese
1 small tomato chopped
10 Ritz Crackers finely crashed
1 tsp dry basil

1.  Parboil (boil food partially) - Bring water to a boil add zucchini, cook for 6-8 minutes.

2.  Cut Zucchini in half long ways.  Take out pulp leaving about 1/4 inch shell; set aside.

3.  Chop zucchini pulp.  Add 1/2 of the mozzarella cheese, tomato, cracker crumbs and basil; mix together.  Spoon into shells sprinkle with remaining cheese.

4.  Bake for 15 minutes at 375 degrees.
